What is King Salmon?

King salmon (also known as chinook) are the largest of the 5 Alaska salmon species with an average weight of 20 lbs and a length that can easily exceed 36 inches. Along with their size, they are known for their extraordinarily high omega-3 oil content. People tend to favor king salmon for their flavor profile, size, and omega-3 rich meat. They are a big fish with a robust and unique taste that provides a nutritional boost to your heart and brain health.

What is Ivory King Salmon?

You might associate king salmon with deep, red/orange colored colored meat, but did you know that about one in 20 king salmon have white meat? The deep red color comes from pigments in crustaceans in the salmons’ diet. Ivory king salmon have white meat due to an inability to process these pigments in their food. Some king salmon have more of a “marbled” texture, a combination of red and ivory colored meat. Though the red and ivory king are nutritionally identical, the ivory flesh is even more densely oiled than a standard king, resulting in a super-premium product with a buttery and lavish flavor.

When and how is Shoreline’s King Salmon harvested?

In Alaska, king salmon is harvested in three different fisheries: gillnet, seine, and troll. Gillnet and seine fisheries harvest salmon using nets, while the troll fishery harvests salmon one at a time using hook and line. At Shoreline Wild Salmon, we maintain the highest quality king salmon by fishing with a hook and line harvesting method (trolling). Hook and line caught allows us to handle each salmon one at a time to preserve taste and texture. Did we mention that less than 10% of all Alaska salmon is troll caught? This means that we are providing our customers the highest quality Alaska salmon possible!

While king salmon can be harvested commercially during many months of the year, king salmon from Shoreline Wild Salmon are primarily harvested between July and September along the coast of Southeast Alaska.
